Slow Cooker Corned Beef

This year I was on top of my corned beef and cabbages, last year I wanted to make it to late there was no corned beef to be found :(. Ended up making it a week before St Patrick’s day.
I knew I wanted to do it in my slow cooker and wanted to use beer. seriously so easy just put everything in the slow cooker and leave it alone. Also that I wanted to cook the vegetables separately, so didn’t all turn to mush. Save all the drippings to make an amazing gravy for corned beef poutine!!

Slow Cooker Corned Beef and Cabbage

You will need
2-4 pounds corned beef, and the seasoning package
12 ounces of Guinness draught
1 small onion, cut in chuncks
2 clove garlic, chopped

2 cups about beef, beer broth
1 pound red potatoes, chunks
1 cup of baby carrots, chunks
1 clove garlic, crushed
1 cabbage head, cut in wedges

Place the corned beef fat side up in the slow cooker. Add seasoning package, Guinness, onion, and garlic. Cover with lid, set to low and let cook 7-10 hours (Depends on the size of corned beef and how hot your low is). Once done turn the slow cooker to warm. Take out most of the beef beer juice. Its fine if you get onion chunks too.

Add the beer beef broth in a pot over medium heat on the stove. Once simmering add the potatoes, carrots and garlic in the pot. Cover and bring back to a simmer. After 5 minutes add in the cabbage. Let cook for 10-15 more minutes.

Enjoy the meat with the vegetables. I love mine with horseradish sauce.

Slow cooker BBQ pulled pork

I am in love with my slow cooker. I love how you can just put stuff in go to work, and then it’s ready when you get home! I was seriously so giddy excited when I got one as a gift.
Pulled pork is so versatile and easy to make, with very little extra prep.

Slow Cooker BBQ Pulled Pork

You will need
1-2 pounds pork loin
2 tablespoons Smoked paprika
1 teaspoon Salt
1 teaspoon Pepper
1 tablespoon Chili powder
1 teaspoon Cayenne powder
2 garlic gloves, crushed and sliced
12 ounces root beer (I uses Dad’s)
1-2 cups of your favorite BBQ sauce

Mix paprika, salt, pepper, chili, and cayenne (you can change up the ratio to whatever you are feeling) together in small bowl. Season all sides of the pork with the spice rub. Add to the slow cooker, along with the garlic. Pour the root beer over the pork. Put on lid and cook on slow for 4-6 hours. Once cooked, drain most of the root beer, shred the pork. Add in the BBQ sauce turn setting to warm for an hour or till ready to eat.
With the seasonings add what you like. But I have noticed those flavors go well with BBQ.
I use about 1 pound of loin and that is great for my small family of 3.

I love rich, filling meals that can be put together in the crockpot and you’re done! I usually dislike slow-cooker meals that involve outside work, but it was super easy to brown the meat while cutting up the veggies.
Slow cooker meals are the best for my work nights. I can prepare before work then the hubby can finish when he gets home. Having a meal already cooking means he can’t order pizza!

Slow-cooker cheese steak inspired sloppy Joes

you will need
1lb Ground beef
1 garlic clove, minced
Salt
Pepper
1 large onion, sliced
8oz mushrooms, largely sliced
1 green pepper, sliced
2 tablespoon flour
1 Onion soup/dip mix packet
¾ cup beef or veggie broth
2 teaspoons Worcestershire sauce
2 cups shredded mozzarella cheese
2oz cream cheese
Rolls

Season meat with salt and pepper and brown in a pan. Don’t break up to small. Once browned add garlic, cook till fragrant. Drain. Add to the slow-cooker. Also add onion, green pepper, and mushrooms. Toss with flour and onion soup mix. Add broth and Worcestershire sauce. Cook on low for 3-5 hours (depending on your cooker, my low runs hot) I stir occasionally to make sure doesn’t burn. Once done add cheese and cream cheese.Give a good stir. Top your rolls! (If you like warm rolls, wrap in foil and stick in heated oven.) You might need a fork for this one!
I must say this is also super good without the cheese or cream cheese.

So my hubby is not a fan of left overs, so to fool him I used this as a sauce for some egg noodles. Yum. Taste kinda like a stroganoff. Reheat the meat mixture on the stove, depending on how you like your pasta sauce add some broth, cream cheese, or milk. I noticed once added the noodles the sauce thinned out a bit. Top with some parmesan cheese and no one will be the wiser this was a left over!
